KALE PESTO QUINOA SALAD
INGREDIENTS:
Kale
Radishes
Pesto
Quinoa
Walnuts
Tomatoes
Olive oil
Lemon juice
Salt/pepper/red pepper flakes
Make sure to massage your kale and combine with olive oil and lemon juice. Let sit for about 20 min (or is perfect if you dress in the morning for lunch later in the day). Toast walnuts on 375 for 15 min and chop. Combine with sliced radishes, pesto, cooked quinoa, kale, and tomatoes. Would also be delish with a little sliced chicken if you want to add some more protein!
