Cheesy Potatoes au Gratin

CHEESY POTATOES AU GRATIN

INGREDIENTS:
4 lbs sliced potatoes
2 1/2 cups heavy cream
4 cups of your fave cheese (I did gruyere and parm) 
3 medium shallots (sliced)
6 cloves of garlic (roughly chopped)
Salt / pepper
Olive oil
A variation of thyme / sage / rosemary depending on seasonings you like

Thinly slice your potatoes and layer them in the pan.
*How thinly you slice your potatoes is crucial to the deliciousness of your dish

In a medium pan with about 1 tbsp olive oil, add garlic and shallots. After about 5 min, add cream and bring to a simmer. Cook down for about 12 min and then add 1 1/2 cups cheese, any herbs you are using, and then pour over your potatoes. Cover tightly with tin foil and bake on 350 for an 60min. Remove tin foil and top with remaining cheese and broil for another 10-15 until golden brown on top. 

*Depending on how deep your dish is, you might need to cook for a bit longer so make sure you check a potato in the middle to make sure. I have accidentally cooked this one for too little time before and it was very unfortunate.
