CRANBERRY WALNUT CAKE
INGREDIENTS
2 cups fresh cranberries
1/2 cup sugar
1/2 cup chopped walnuts
Batter:
2 eggs
1 cup sugar
1 cup flour
3/4 cup melted better
Grease a 10’ pie pan or 8; square cake pan. Spread cranberries over bottom and sprinkle wet 1/2 cup sugar and nuts.
Using a mixer, beat eggs well. While still mixing, add in 1 cup sugar gradually and beat until creamy and fully combined. Add flour and melted butter to egg sugar mix. Pour over berries and bake for 60 min on 325. Crust should be a golden brown.
