DIY GRANOLA

The fun part of this recipe is that you can alter and change which nuts and spices you want to use. Please use the below recipe as a loose guide and I definitely encourage trying new nuts and variations!

INGREDIENTS
3 cups old fashioned rolled oats
1 ½ cups pecan halves, broken in pieces
1 cup unsweetened coconut flakes
1 cup raw pumpkin seeds (pepitas)
½ cup pure maple syrup
½ cup extra virgin oil
1 tsp kosher salt
1 tsp ground cinnamon
1 tsp ground cardamom
1 tsp ground nutmeg
½ tsp ground ginger
2-3 Tbs roasted flax seed
1 cup walnuts
OPT: dried raisins, cherries, cranberries

Preheat oven to 300.

Combine oats, pecans, coconut, and pumpkin seeds. Add maple syrup, olive oil, salt and spices. Toss everything until evenly coated. Spread mixture out on a large baking sheet with rims on all sides. Bake 30 min then give a good stir. Bake another 15 minutes or until golden brown and smells amazing.
