Garlic Butter Clams w/ Spicy Tomato Broccoli Rabe Toasts

GARLIC BUTTER CLAMS WITH SPICY TOMATO BROCCOLI RABE TOASTS

Ok this one was kind of a combo of a few things I was trying and turned out to be absolutely incredible and pretty easy. I used a simple garlic butter sauce for the clams and then grilled some broccoli rabe in a little olive oil and salt. I used Raos Arrabbiata Sauce, and added some white beans and topped with parm. You of course could make your tomato sauce from scratch if you had more time. I broiled a few pieces of toast and here we are! Perfect summer dish.

THE CLAMS / BREAD:
6 tbsp butter
4 garlic cloves chopped
Black pepper
Salt
2 dozen clams
1/2 baguette sliced

On low heat, combine the butter and chopped garlic with lots of cracked pepper and salt. Meanwhile, heat grill to 400 and cook clams until they pop open, about 3-5 min. As they pop, remove from grill and pour a tbsp of butter mixture over each one. Repeat until all the clams are done.

Using a spoon, coat the remaining mixture over your sliced bread and toast or bake. Do this right before cooking, as it only take a few minutes.

THE BROCCOLI RABE (or BROCCOLINI)
Toss in a light coat of olive oil, salt and pepper and put on the grill (or a baking sheet) on 400 and turn until each side gets a nice char

THE SAUCE
3 chopped garlic cloves
Half a jar of @raoshomemade arrabbiata sauce
1/2 can of small white beans
Red pepper flakes
1/2 cup of red wine (optional)
A few basil leaves

Combine together on medium heat until hot, and then turn down to low until everything else is ready. Then pour bowls of sauce and top with clams and broccoli rabe. Serve bread on the side and let everyone assemble their little toasts!
