LOBSTER PASTA A LA VODKA
This was such a fun one to make! This summer I have been lucky enough to pull a lobster trap and cook my catch! I love vodka sauce and it was perfect to add in some lobster. The lobster is butter poached and the vodka sauce recipe is courtesy of @skinny_italian . I combined the 2 together and topped with some parm and it was amazing. If you are looking for a fun pasta to cook this Sunday, I would def recommend this. You could make with or without lobster over your fave pasta type.
SAUCE RECIPE:
1/2-1 onion (like a whole medium white onion) until translucent (very small chop) in oil maybe like ONE garlic clove with it
Tomato paste like idk two tbsp ?? Half can? Let it like cook like get aromatic melt down
I would add honestly like not a lot of tomatoes and I would do crushed tomatoes so that it isn’t chunky. Maybe half a large can or a small can. Mix around.
Add 1/2 C or so of vodka. Let reduce. And simmer with whatever herbs like I’d say a bit of parsley for this
Add cream until it’s pink and cook down more simmering so everything comes together
Cook pasta and add 1 C or so of the pasta water when the pasta is almost done cooking
BUTTER POACHED LOBSTER RECIPE:
Cook your lobster in boiling water for about 5 min (6 if its bigger than 1.5LB). Crack lobster and chop meat into bite sized pieces. Sauté in half a stick of butter a few slices of lemon. Cook down for another 5 min or so.
Combine with the sauce and pasta!
