NO MAYO POTATO SALAD
If you’re looking for something to bring to a BBQ or just a great snack, this is a great summer classic. I don’t like mayo so tried a little something different...
Ingredients:
8-10 Red potatoes
6-8 sprigs of Dill
1 small onion sliced
1 cup arugula
1/2 basil chopped
Dressing:
1/2 cup Olive oil
1/5 tbsp Dijon mustard
1/3 cup White wine vinegar
Red pepper flakes
Salt /pepper
Cook potatoes in water on the stove for about 25-30 min. Remove and when cool, cut into pieces. Chop onion, and combine with potatoes and herbs. Mixed dressing in a a separate bowl and combine together. If you don’t mind it a little warm you eat right after. Or, stick in the fridge and let it get cold. Enjoy!
