Peach Cucumber Summer Rolls

PEACH CUCUMBER SUMMER ROLLS WITH A GINGER COCONUT AVOCADO DIPPING SAUCE

Summer calls for peaches! So, I bring you these delish (and healthy) summer rolls. I brought them to a BBQ last night, and just made another batch to have as a quick snack during my busy workweek ahead. Definitely give these guys a try!

THE SAUCE:
In a food processor combine:
1/2 cup coconut milk
1/2 avocado
Juice from 2 limes
2 tbsp cashew or peanut butter
2 tbsp ginger
3 garlic cloves
1/2 jalapeno
Salt / pepper

The rolls:
These can totally be a choose your own adventure both with the veggies you pick, and the herbs you use. The peaches work great with cucumbers, avocado, carrots, tofu, radishes, bean shoots etc etc. for herbs, I added a mix of mint, basil and dill. If you’re using tofu, cut into strips and coat in olive oil and bake on 425 for 15 min. Cut all your ingredients into strips and slice your peaches super thin. Dip your rice paper in water and assemble each roll with a little handful of each ingredient. Careful not to overstuff. Fold and roll! (I watched a YouTube video for how to roll which was helpful). Top with sesame seeds and dip in your delish sauce!
