Pure Flavor: Baked Snapper with a Tomato Wine Sauce

BAKED SNAPPER WITH A TOMATO CAPER WINE SAUCE

At the end of 2021, I had the privilege of visiting Florida and getting to do a lot of fishing. During that time I was able to catch some delicious fresh fish and vacuum seal it to bring home to enjoy. This is always such a treat because it means easy fresh meals every few weeks, and it’s rewarding to prepare a meal that you actually caught yourself. The recipe below is simple and delicious, and one I’ve done on several occasions for an easy and healthy weeknight meal. I used Pure Flavor® Luna® Sweets Cocktail Tomatoes to really give the sauce loads of flavor, and some added texture. Because the fish simmers in the sauce while it cooks, the tomatoes make the fish very tender and adds a sweetness. (I also snacked on a few while cooking and they are very tasty on their own). 

You could cook this with really any fresh white fish, and because it’s all done in one pan, it’s super easy and great for a bigger group. I suggest serving with sushi rice because the delicious sweetness of the Pure Flavor® Luna® Sweets Cocktail Tomatoes make the sauce so flavorful, that you’ll want plenty of rice to soak it all up.

Ingredients:
3-4 snapper filets (or another white fish like cod)
2 shallots, minced
1 bell pepper, cubed 
1 package of Pure Flavor® Luna® Sweets Cocktail Tomatoes
4 garlic cloves, sliced
1/3 cup capers
1 tsp red pepper flakes
3/4 cup white wine
1/4 cup chicken stock
3 sprigs of thyme
Salt/pepper
1 tbsp butter
Basil for topping
Sushi rice for serving 

Step 1: Preheat oven at 400
Step 2: In a large oven safe pan, place shallot, bell pepper, tomatoes, garlic, capers, red pepper flakes, wine and stock into the pan and combine. Season with salt and pepper. Cover with a lid or tin foil and bake for about 15 min.
Step 3: Rinse and pat dry fish, and then nestle filets into the pan. Add a little dollop of butter to each piece of fish (this should help keep them moist). 
Step 4: Return to the oven for another 10 min or so, depending on the thickness of your fish.
Step 5: Remove and serve with sushi and top with basil. Enjoy!
