Pure Flavor Sweet Tomato Popovers

PURE FLAVOR SWEET TOMATO AND THYME SAUSAGE POPOVERS

And just like that, Thanksgiving is over and the holidays are immediately in full swing. With everyone putting up decorations and finding reasons to come together, it really is one of my favorite times of year. For people who love to cook, this is kind of like our superbowl! But for some, it can be a lot of pressure to put together menus, or decide what to bring to a gathering. Over these holiday months, with the help of [Pure Flavor], I have come up with some delicious, quick and approachable recipes that hopefully help get you excited to cook at home. 

For this recipe, I partnered with Pure Flavor and used their RedRoyals® Sweet Cherry Tomatoes On-The-Vine. to make these super easy mini thyme, tomato and sausage popovers. What is so fun about popovers is that they are not only so light and airy, but you can fill them with whatever you want. You could try other veggies, make them sweet, or just have them plain with butter. I chose to make them with the RedRoyals® sweet cherry tomatoes because they bring a level of sweetness and flavor that compliments the savory sausage and herbs. Not to mention they bring a beautiful color to any dish you make which is always a plus! This recipe is perfect for a holiday breakfast, and really easy to make if you are cooking for a bigger group. Thyme, tomato and sausage popovers
2 tablespoons butter, melted, plus more for the muffin tin
1 3/4 cups milk
4 eggs, beaten
1 3/4 cups all-purpose flour
1 spicy pork sausage (removed from casing)
RedRoyals® Sweet Cherry Tomatoes On-The-Vine, diced
½ grated gruyere cheese
3 sprigs of thyme or sage (depending on preference) roughly chopped
Extra virgin olive oil
Salt/Pepper

Step 1: 
Note: Muffin tin size will impact how long you cook in the oven. I had a small one so did for 10 min, but sometimes it can take up to 20-25 min. Make sure to check for when they puff up and get golden brown. 

Preheat the oven to 425°F. Generously butter 12 cups of a standard muffin tin.

Step 2:
On medium heat, add olive oil, sausage, RedRoyals® sweet cherry tomatoes, and herbs to a pan. Cook until the sausage has browned and blended nicely with the tomatoes. Season with salt and pepper to taste. Let cool and then roughly chop and set aside.

Step 3: 
Meanwhile, place milk in a bowl and warm in the microwave for about 40 seconds (just so it’s not super cold).

Step 4: 
Whisk in the eggs, 2 tablespoons melted butter, flour, and ¾ tsp salt until smooth. Place the muffin tin in the oven to preheat for 2 to 3 minutes.

Step 5: 
Remove the pan from the oven and, working quickly, add batter about ¾ of the way up each cup. Add a spoonful of the sausage-tomato mixture to each cup. Scoop more batter until each cup is full (but not overflowing). Sprinkle a little gruyere on each.

Step 6: 
Bake in the oven anywhere from 10-25 min depending on how big your muffin tin is. You’ll know theyre done when they are golden brown and have puffed up over the sides of the tin
