Purple Cabbage Slaw & Citrus Lime Pulled Chicken

PURPLE CABBAGE SLAW & CITRUS LIME PULLED CHICKEN

This one is perfect for a healthy reset! I’ve made this as a topping on tacos or simply on its own and it’s good both ways. So here’s to trying to stay positive and taking care of ourselves 🧘🏻‍♀️

Ingredients:
Chicken:
Boneless skinless chicken thighs
Olive oil
Salt / pepper
Juice from half a lime
Slaw:
2 heads of cabbage (you’ll likely only need about half a head of each)
1/4 cup lemon juice
1 small red onion thinly sliced
Handful of cilantro chopped
3 tbsp red wine vinegar

Rinse chicken and toss with lime juice and olive oil. Sprinkle with salt and pepper and bake for about 18 min on 375. Check temp should be about 160. When chicken is cooled, remove and shred. Meanwhile, thinly slice your onions and place them in lemon juice for about 20 min. This allows for onion to keep they flavor but lose some of the bite onions have that can overwhelm a dish. (Shout out to @ciaosamin for teaching me how to macerate my onions in her book Salt Fat Acid Heat). Chop cabbage and toss with onions, vinegar and a few tbsp of more olive oil. Combine with chicken and top with cilantro. Enjoy!
