Raspberry Oat Breakfast Bars

RASPBERRY BREAKFAST BARS

Looking for something to meal prep for the week? These breakfast bars really do the trick. A mix of oats, fresh raspberries and walnuts these guys are easy to grab and go.

INGREDIENTS:
Parchment paper (or tin foil)
2 cups flour (or whole wheat flour)
1/2 cup sugar
1/2 teaspoon salt
1 1/2 stick of softened butter (cut into pieces)
1/2 cup oats
3/4 cup walnuts
1/2 cup brown sugar
2 tbsp flax seeds
1 container rasberries
2 tbsp lemon juice

Preheat oven at 375 and line pan with parchment paper. Whisk flour sugar and salt in a bowl. Mix in all the butter except for 2 pieces. Once all is mixed, reserve 1 cup of the mix and set aside. Pour the rest into the pan and push down into a crust with the base of a cup. Bake for 15 min.

In another bowl, mix the 1 cup mix, oats, brown sugar, walnuts, flax seeds and the rest of the butter. In a separate bowl, max the rasberries and lemon juice until it turns into a mash. Spread the raspberries over the hot crust and top with the remaining nut/oat mix. Bake for another 22 min. Enjoy!
