Shrimp and Cilantro Edamame Toasts

SHRIMP AND CILANTRO LIME EDAMAME TOASTS

Another day another toast: Shrimp and cilantro lime edamame toasts— These have a lot of flavor and are quite tasty. I’ve never made edamame into a puree but it tasted delish. Great for a picnic or app to serve. !

Recipe:
3/4 cup cooked edamame
1 garlic clove
Juice from 1 lime
Handful of cilantro
2 tbsp olive oil (add more if slowly if it looks dry)
1 lb clean shrimp
1 baguette
1 serano chili
Salt/pepper

In a food processor, combine the edamame, garlic, 3/4 the lime juice, cilantro, olive oil and some salt and pepper. Meanwhile, coat shrimp in olive oil, remaining lime juice and sauté in a large skillet. Make sure to leave room in between each so they cook evenly, a few min per side. Remove from heat and roughly chop the shrimp. Slice the baguette and coat with olive oil. Toast and then assemble your toasts.

Assembly:
Spread the edamame puree on the toast and add shrimp. Top with serano chili, cilantro and more lime juice (optional). Season with more salt and pepper. Enjoy!
