Shrimp Broccoli Arugula Caesar

SHRIMP BROCCOLI ARUGULA CAESAR

I used shrimp for this, but you can absolutely sub for your fave other protein or just have it on its own. Broccoli and shaved broccoli stems are kind of like kale— the longer they sit in dressing, the better they are. Which makes this great for a working lunch!

INGREDIENTS:
Tomatoes
Broccoli (uncooked)
Arugula
Red onion
Parm
Shrimp (or your fave protein)

DRESSING:
1 chopped garlic clove

¼ cup fresh lemon juice

2 tsp. Dijon mustard

salt/pepper/red pepper
1 large egg yolk
½ cup olive oil
4 Tbsp. grated Parm

Whisk lemon juice, mustard and salt. Add egg yolk slowly until all mixed. Add olive oil followed by parm until all mixed together. If you do end up doing this for lunch, I would suggest combining with broccoli earlier to get a little more tender and then add the rest.
