SKILLET PESTO SAUSAGE WITH BABY POTATOES
Perfect for a Sunday dinner!
Ingredients:
1 medium white onion sliced
1 sliced pepper cut into strips
2 cups of kale - stems removed and cut into bite sized pieces
1 cup of baby potatoes halved
1 package of chicken sausage sliced into coins
4 cloves of garlic roughly chopped
1/4 cup pesto
Salt/pepper
Olive oil
Pesto:
2-3 cups fresh basil 3/4 cup grated parm 3/4 olive oil (have a little extra on hand to add if sauce is feeling a little dry) handful of pine nuts or walnuts Salt/pepper/red pepper flakes
Lightly coat kale in olive oil and massage and set aside. In a pot, boil potatoes in salted water for about 6 min or until tender. Drain and set aside. In a large skillet add olive oil and garlic. After 2 min, add sliced onions and cook until translucent, about 6 min. Remove and add more olive oil in a pan and let it get hot. Place potatoes sliced side down on the oil and let sit for about 5 min un touched. They will get super crispy. Remove from pan and add in sausage and cook for about 5 more min, or until the sausage gets crispy on the outside. Then add back in the potatoes, peppers and onions. And let cook together for another 5 min. Add kale and combine for another 2 min. Remove from heat and add in your pesto sauce. Serve hot!
