SPINACH ARTICHOKE ROLLS WITH A BALSAMIC DIPPING SAUCE
INGREDIENTS:
3/4 shredded mozz
1/4 cup sour cream
1 block of cream cheese
1 box of spinach (or frozen spinach)
1 can of artichokes
1 cup parm
Pizza dough (store bought or homemade)
Olive oil
Salt/pepper/red pepper flakes
Boil fresh spinach or thaw out frozen and press down with a paper towel to remove as much water as possible. In a bowl, combine shredded mozz, sour cream, cream cheese, parm, red pepper, chopped artichokes and spinach. Spread out pizza dough in a rectangle shape getting it as long as possible. Spoon in the filling and roll “hot dog” (horizontal). FUN TRICK: using floss (unscented) underneath the log about 2 inches down, tie across roll to get a clean cut for each roll. Repeat every 2 inches. Place the rolls swirl up into a pan so that they are hugging each other. Coat in olive oil, more red pepper and bake in oven on 400 for 30-35 min. Check them, they might need another 10 min or so. Combine balsamic with red pepper and some olive oil and use for dipping on the side.
