Two Boots Buffalo Pie

A TAKE ON TWO BOOTS PIZZA BUFFALO PIE

I have always loved anything buffalo and the Two Boots buffalo pie is no exception. This is my attempt at recreating this scrumptious pizza from home! I also don’t have a very big oven, so was able to use a cast iron skillet which worked perfectly! No special equipment required.

INGREDIENTS:
Pizza dough (homemade or store bought)
Blue cheese crumbles
2 chicken breasts (or boneless chicken thighs)
Hot sauce
Jalapeños
Scallions

THE SAUCE:
3 tbsp hot sauce
2 tbsp butter
1 tbsp olive oil
1 small white onion (diced)
2 garlic cloves (sliced)
3 tbsp flour
1 cup milk
1/2 cup grated parm + 1/2 cup for topping
salt/pepper/red pepper flakes

For the sauce: Heat butter and olive oil in a small saucepan over medium heat. Add onion and garlic for about 2 min. Add flour and whisk until flour is lightly browned and onion is translucent, 2 to 3 minutes. Add in milk and parm and stir continuously, until cheese has melted and the sauce is thicker. Make sure to keep stirring because it is super easy for the flour to get lumpy in the sauce. Remove from heat and add hot sauce, salt, pepper and pepper flakes.

Meanwhile, preheat oven to 375 and coat chicken with hot sauce. Bake for about 12 min a side depending on thickness. Chicken can still be a little pink inside, as it goes back in the oven later when the pizza bakes. Cut chicken into bite sized pieces.

Assembly: Add 1 tbsp of olive oil to skillet and stretch your pizza dough until it lines the bottom of the pan. I used store bought pizza dough which works great, but feel free to make your own. Ladle buffalo white sauce over the pie. then top your pieces of chicken. Add slices jalapeños, scallions and blue cheese crumbles. Grate parm on top and drizzle with more hot sauce. Bake on 450 for 15 minutes.
