Vanilla Coconut Chia Pudding

VANILLA COCONUT CHIA PUDDING

This is an easy and healthy meal prep breakfast (or dessert) for the week. I’ve always thought chia pudding was difficult to make but turns out its super easy! In this one I used raspberries, but you could definitely do another fruit like bananas or strawberries. 

RECIPE:
1/4 cup shredded unsweetened coconut
1/4 cup chia seeds
3/4 cup full fat coconut milk (or coconut cream)
1/3 cup coconut water
2 tsp vanilla
Pinch of salt
Your fave fruit

In a bowl, combine everything but your fruit. Once combined, put a few pieces of fruit in the bottom of 3-4 mason jars. Pour mixture over and fill halfway. Then place a few more pieces of fruit. Pour remaining mixture until you reach the top and chill for at least 2 hours. Serve with more fruit and cinnamon. Enjoy!
