Vegetarian Taco Bowls

VEGETARIAN TACO BOWLS

Ingredients: 
2 smashed garlic cloves
2 tsp. ground coriander
1 tsp smoked paprika
1 tsp. ground cumin
½ tsp. ground fennel
1 tbsp. tomato paste
2 tsp. hot sauce

Shredded red or napa cabbage
Avocado
Queso fresco
Cilantro
Lime
Firm tofu
Olive oil
Sour cream
Jalapeño

Remove excess water from tofu and tear into 1"–2" pieces.
Cook tofu on stove with salt until. Golden brown and crisp around the edges (5-7min).

Add garlic and toss occasionally (this will break up the tofu which you want).

Reduce. Heat and add coriander, paprika, cumin and fennel for 20 secs then add tomato paste. After 1 min, add hot sauce and 1 cup water. Sauce will thicken after about 5-7 min. Combine with cabbage/avocado/queso/cilantro or whatever you usually add to a taco bowl. Top with mixed lime juice, sour cream and jalapeños depending on your spice level!
