WHIPPED LEMON RICOTTA TOASTS WITH SMOKED SALMON AND CRISPY CAPERS
Toasts are such a good option for a holiday app and these are no exception! These are a take on smoked salmon crudités but the whipped lemon ricotta adds an extra twist. Also, if you take anything from this, ALWAYS fry your capers. They immediately add a crunch and are so much better that way.
INGREDIENTS:
baguette
Ricotta cheese
1 lemon
Capers
Red onion
Smoked salmon
Olive oil
Arugula
Cut bread into pieces and drizzle with olive oil. Toast at 375 for 5-7 min. Meanwhile, blend ricotta and juice from half a lemon in a food processor. Add in plenty of black pepper. In a pan heat a tbsp of olive oil and add capers. Stir continuously to prevent burning. You’ll hear the capers pop as they begin to crisp. After about 5 min, remove and place on a paper towel. When bread is done, add lemon ricotta. Add a piece of smoked salmon and top with sliced onions, lemon zest and capers. Add to a bed of arugula and serve. Enjoy!
